  • 12 small chops
  • 1 tsp salt
  • 1 tsp dried thyme

Method

Sprinkle the chops with salt and thyme. Heat the fat and fry the chops on a very low heat for 4 minutes each side; remove to a plate.

Put the pan back on the heat and fry the onions for 7-8 minutes, add the peppers and fry for another 4 minutes. Add the garlic and tomatoes and fry for a further 5 minutes. Now put in the herbs, spices, salt and stock and cover the pan. Bring to the boil,
