Good şiş köfte should fall apart at the touch of a fork, and to achieve this the meat should be finely chopped by hand.


  • 300 g/10 oz leg of lamb
  • 200 g/7


Remove the sinewy parts of the meat. Chop the meat and fat finely with a cleaver. Add salt and pepper to taste and knead it in well. Divide into six portions and fix each portion on a skewer by squashing the skewer into the minced meat in the palm of your hand.

Grill the tomatoes until tender. Crush with a pestle in a bowl to make a pulp, remove the skins, and transfer to a serving dish
