Içli köfte is a common dish throughout southeastern Anatolia. In Adıyaman, when a bride comes to her new home, her mother-in-law leaves whatever she intended doing after the noon prayers to prepare içli köfte. She hollows out the köfte, stuffs in a filling and seals up the hole, thinking to herself: “may the bride’s mouth be sealed likewise”!
