In Ottoman times, delicious dishes comparable to those of the imperial palaces were produced for banquets in the homes of ministers, religious dignitaries and noblemen. Cooks were always trying to devise new dishes. Hasan paşa köftesi was named after the pasha whose cooks conceived the recipe. It is a delicious köfte contrived for guests who shy away from rich food.
