This stew can be served on croûtons if the tomato purée is omitted. Cut slices of bread into 2cm/¾ inch squares and “bake” briefly in the oven. Pour the stew over the bread and serve.
Drain the chickpeas and boil in 1.5 L/2½ pints fresh water for about 1 hour until they are semi-tender. Drain.
