The best truffles in Turkey are to be found in central Anatolia in the Konya region. These truffles are very different from French or Italian truffles in taste. In the villages they are used as a meat substitute because they give a meaty flavour to the dish. They go well with rice, vegetables and kebabs and this pilaf made with truffles is particularly delicious.
