  • 4 small chicken breasts
  • 500 g/1 lb okra

Method

Prepare the okra and soak for 30 minutes as described on p.91.

Melt the fat in a pan, add the chicken breasts and fry on both sides for 5 minutes. Add the onions and fry for 3–4 minutes. Pour on 200 ml. 1/3 pint boiling water, cook for 15 minutes and transfer to an iron casserole.
