This dolma recipe is from Konya. You can also prepare dried greengages in yahni fashion – as a stew. Prunes can be used instead of dried greengages.


  • 125 g/4 oz dried greengages
  • 25 g/1


Prepare the stuffing. Wash the dried greengages and put them in a pan with 1 L/1 ¾ pints cold water. Bring to the boil and simmer for about 10 minutes until they are ready to open in the middle.
