Patties are an ideal food for cold buffets and picnics.


  • 500 g/1 lb courgettes
  • 100 g/31/2


Wash and grate the courgettes and squeeze out the juices by pressing firmly in your hands or in a muslin cloth. Prepare the onions in the same way.

Heat 1 tbsp olive oil, add the onion and courgette and fry for 1 minute, stirring. Transfer to a bowl and allow to cool.
