  • 500 g/1 lb runner beans, cut into 2.5 cm/1 inch lengths
  • 150 g/5


Mix together the beans, onions, peppers, salt and tomato purée. Heat the oil in a pan, add the vegetables, cover and fry them lightly for 5 minutes, shaking the pan occasionally. Add the tomatoes, water and sugar and cook until the beans are tender. Leave to cool in the pan. Transfer to a serving dish and serve cold.
