Dishes of leafy green vegetables prepared with a yoghurt and garlic sauce and piping hot butter poured over them are known as borani.
Melt the fat and fry the onions for 3–4 minutes. Add the spinach, water and salt. Cover the pan. When it comes to the boil, reduce the heat to very low and add the rice. Cook for 15-20 minutes until the rice is tender. Remove the pan from the heat.
