The 11th-century Classical Turkish Dictionary refers to the slaying of a sheep to celebrate the arrival of an honoured guest, and since the brain is the best part of the animal, this is served to the guest.

Brains salad would usually be served at a drinks supper.

Ingredients

  • 3 sheep’s brains
  • 1 small onion, quartered
  • 1 tbsp vinegar

Method

Remove the membranes from the brains under running water. Put them in a pan with 1 L/1 ¾ pints water, the onion, vinegar and salt. Bring to the boil, then cover and simmer for 15 minutes. Cool in the liqui
