Onion salad invariably accompanies kebabs and köfte, be it at home, in restaurants or from a street vendor.


  • 500 g/1 lb onions
  • 1 tbsp salt


Slice the onions finely in rings, sprinkle with the salt and leave for 4 minutes. Rub well with your fingers, rinse and squeeze out the excess water. Put the onions in a bowl and mix in half the parsley.

Arrange the onions on a serving dish, sprinkle with sumac, surround with the remaining parsley and olives and serve.
