The discovery of bulgur grains at the 7-8, 000-year-old Çatalhöyük archaeological site raises the question as to whether they used to make bulgur pilaf during that far distant period. Since the other basic ingredients are fat and water, we can presume they did. I like to think of sharing a taste for bulgur with fellow humans who lived long ago.
