Iç pilavı is one of the finest and tastiest of all pilafs. It may be served on its own or wrapped in yufka (thin sheets of dough like filo), as below.


  • 300 g/1 oz rice
  • 25 g/1 oz


Grease a shallow pan or mould measuring about 20 × 8 × 6 cm/8 × 3 × 2 inches and set aside.

Soak the rice in warm salted water and allow to cool. Soak the currants for 30 minutes in warm water.
