Baklava is perhaps the national dessert, and it is served at official functions and at all kinds of banquets and parties. Although excellent baklava is made in private houses, the special baklava shops of Gaziantep in southeastern Turkey achieve such high standards that even homemade baklava seldom surpasses them. Gaziantep is the very mecca of baklava making, as it is of kebab making.
