In southeastern Anatolia the approach of summer is celebrated at the Festival of Hıdırellez on 6 May, 40 days after the spring equinox, by dressing in white and eating white food, such as milk dishes, rice pudding, pilafs and sarmas of cabbage leaves, to ensure – according to local folklore – that the year ahead be bright in all respects.
