This Turkish ice cream has a delicate and unusual flavour. Sometimes mastic is added, which gives it a special taste.


  • 500 ml/17 fl oz milk
  • 50 g/2 oz<


Prepare the salep mixture as described. Remove from the heat and cool, then transfer to an aluminium or pyrex bowl and place in the freezer or freeze in an ice cream machine according to the manufacturer’s instructions.

Freeze, stirring occasionally with a wooden spoon.

Serve in individual bowls garnished with grated bitter chocolate.
