Prove the yeast with the sugar in the milk. Sift the flour into a bowl, add all the spices, salt and proved yeast mixture. Blend.
Leave to rise, then knock back and work in the melted warm butter, milk or water and egg. Knead to a firm dough. Divide in two, cover and leave to rise for about 1 hour in a warm place.
