Sherbets are light cooling drinks that used to be served between courses at banquets in order to refresh the appetite. They are made from fresh seasonal fruit or flowers that impart aroma and colour and are now drunk at any time of day.


  • the rind of 2 lemons, grated
  • 4 mint leaves, 2 tbsp sugar


Pound the lemon rind, mint leaves and 2 tbsp. of the sugar together in a mortar. Tie up the resulting paste in a piece of muslin.

Heat together the lemon juice, remaining sugar and water and stir
