Rose sherbet is an old favourite, served at many traditional gatherings and ceremonial functions. Elizabeth I’s ambassador to the Ottoman Court, Edward Banton, wrote in his report that he had attended a dinner at which one hundred different dishes were served, including sherbet.

Rose sherbet can be prepared with rose water as well as petals by adding enough rosewater or rose essence to impart a scent of roses to 200
