These delicious muffins have a lovely speckled appearance. They are a good accompaniment to savoury dishes, such as spiced bean casserole, but also make a satisfying breakfast or snack. You can substitute cranberries, if you wish, but avoid very soft fruits, such as blackberries and redcurrants as they will disintegrate when baked. Dried fruit also works very well. Try a mixture of raisins, sultanas/golden raisins and currants, pre-soaked in apple juice, or use pre-soaked apricots chopped very finely.
