A smashing soup. I personally think the combination of avocado and soya is excellent, but if you don’t like the nutty taste of soya milk, use skimmed milk instead. The perfect accompaniment to this soup is the cheese andleek brioche.
flesh from 3 small or 2 large, ripe avocados
juice and zest from 2lemons seasoning to taste
1.7litres/3pints/7½cupssoya milk (unsweetened)
150ml/5fl oz/⅔cupsour cream or fromage blanc/cream cheese
Blend the avocados with the zest and juice from 1 lemon, the seasoning and soya milk. Pour the sour cream into a separate bowl and mix in the zest and juice of the other lemon. Chill the soup for 2 hours. Serve with the sour cream mixture.
