A smashing soup. I personally think the combination of avocado and soya is excellent, but if you don’t like the nutty taste of soya milk, use skimmed milk instead. The perfect accompaniment to this soup is the cheese and leek brioche.

Ingredients

  • flesh from 3 small or 2 large, ripe avocados
  • juice and zest from 2 lemons seasoning to taste
  • 1.7 litres/3 pints/ cups soya milk (unsweetened)
  • 150 ml/5 fl oz/ cup sour cream or fromage blanc/cream cheese

    Method

    Blend the avocados with the zest and juice from 1 lemon, the seasoning and soya milk. Pour the sour cream into a separate bowl and mix in the zest and juice of the other lemon. Chill the soup for 2 hours. Serve with the sour cream mixture.
