I was first given this when living in Sicily, but I have since discovered that variations of this salad crop up all over the coast of North Africa. Serve with cabbage and coriander pâté, or any pasta dish.
Arrange the lettuce on a platter. Peel the oranges, divide into segments and remove the pith and membranes. Arrange the segments and olives on top of the lettuce. Mix all the dressing ingredients together and spoon over the salad just before serving. Garnish with the mint.
