This famous Mexican dish consists of a spicy stuffing inside a corn meal pancake called a tortilla. Tacos always make a successful beginning to a meal, but they are also excellent party food. Try them with sliced spring onions/scallions and a creamy herb sauce.

Ingredients

  • 2 onions, diced
  • 2 green chillies, chopped
  • corn oil for frying
  • 225 g/8 oz/1 cup pinto beans, cooked and mashed
  • 100 g/4 oz/½ cup cottage cheese
  • 100 g/4 oz/1 cup potato, cooked and diced
  • ½ teaspoon cumin seasoning to taste
  • 12 tortillas
  • 2 eggs, beaten

    Method

    Soften the onions and chillies in a little oil. Mix the beans with these and the rest of the filling ingredients. Dip each tortilla in the beaten eggs, place 2 tablespoons of filling in the centre, fold over and press down lightly. Fry until crisp.
