The pleasure of this casserole is its infinite variability. It is amazing how all types of bean adapt to a huge range of different flavours. Serve with lettuce and egg mould for a satisfying main course.
Drain the beans and then boil fiercely in fresh water for 10 minutes. Drain and put to one side. Heat the oil in a casserole, add the spices, garlic, onions, peppers and chillies.
