This is a Greek dish which is renowned all over the Middle East. It is a lovely combination of yoghurt, mint and cucumber. Serve it as an appetizer with pitta bread, or eat with curry.


  • 1 large cucumber
  • sea salt
  • 2 or 3 garlic cloves, crushed
  • 150 ml/5 fl oz/ cup plain yoghurt
  • freshly ground black pepper
  • 3 tablespoons fresh mint, finely chopped


Dice and salt the cucumber as described on. Mix all the other ingredients together in a large bowl and stir in the cucumber. Chill thoroughly before serving.
