I first got to know this curry when I ordered it at David Thompson’s Sailor’s Thai restaurant in Sydney several years ago. David was famous for his cooking at Darley Street Thai, the restaurant he has now sold. He is still a part-owner of Sailor’s Thai and the food there is, for me anyway, no less authentic, and at the same time simpler but more exciting.
