Egg noodles or udon can be used for this dish, instead of rice sticks. The noodles are spiced by being mixed with the cooking sauce of the venison just before serving. For practical reasons, it is advisable to cook the venison well in advance, several hours or even a day ahead. The noodles, naturally, are cooked just before they are served. In Laos, a venison dish would be served with glutinous rice, or if with noodles then the choice would be rice sticks.
