  • 8 ounces cottage cheese
  • 1 cucumber, peeled, seeded and diced
  • 1 tablespoon chopped chives
  • Mayonnaise
  • Salt and freshly ground black pepper
  • Lemon juice
  • Dash of cayenne pepper


  1. Combine the cottage cheese with the diced cucumber and chives. Add enough mayonnaise to bind the mixture.

  2. Season with salt, black pepper, lemon juice and cayenne to taste. Serve as a spread for toast rounds or triangles.
