  • 1 pound stewing beef
  • 1 large marrowbone
  • 1 onion

Method

  1. In a large kettle combine the beef, marrowbone, onion, celery, parsley, garlic, thyme, bay leaf, carrot, peppercorns and water. Bring to a boil and skim the surface. Simmer for one and one-half hours, or until the beef is almost tender.
