  • 2 pounds halibut steaks
  • ¼ cup all-purpose flour
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • teaspoon grated nutmeg
  • ¼ cup melted butter
  • cups milk
  • cup grated Parmesan cheese
  • ½ teaspoon Worcestershire sauce
  • 1 package (10 ounces) frozen chopped spinach, cooked and drained
  • Paprika


  1. Preheat oven to moderate (350°F.).

  2. Remove the skin and bones from the fish and cut the fish into serving pieces.

  3. Blend the flour, salt, pepper, nutmeg and butter together in a small pan. Gradually stir in the milk and bring to a boil, stirring. Add the cheese and Worcestershire.

  4. Combine the spinach with half of the sauce and spread in the bottom of a well-greased shallow baking dish.

  5. Arrange the fish over the top of the spinach. Pour remaining sauce over the fish. Sprinkle with paprika and bake for about twenty-five minutes, or until the fish flakes easily when tested with a fork.
