Ingredients

  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 celery rib, diced

Method

  1. Combine the onion, garlic, celery, bay leaf, parsley, mustard, apple, butter and ham in a saucepan. Cook for eight minutes, stirring occasionally.

  2. Add the flour, mace and curry powder. Cook for four minutes longer.

  3. Add the broth and simmer for one hour. Strain the mixture into another saucepan, forcing the solids through a sieve.
