Ingredients

  • 1 marrowbone (5 inches)
  • pounds round steak, ground
  • Salt and freshly ground black pepper

Method

  1. With a long sharp knife cut the marrow from the bone and push it out. Slice the marrow. Drop the slices into barely boiling water and poach for about three minutes. Drain.

  2. Chop the marrow and combine with the meat and salt and pepper to taste. Mix lightly with the hands and shape the mixture into four large patties.
