Spinach with Sesame Seeds

  • 2 pounds fresh spinach
  • ¼ cup sesame seeds
  • 3 tablespoons soy sauce
  • ¼ cup butter
  • Juice of ½ lemon
  • Salt and freshly ground black pepper


    1. Preheat oven to moderate (350°F.).

    2. Wash the spinach and discard any tough stems. Place the spinach in a saucepan with only the water that clings to the leaves. Do not season. Cover, bring to a boil, and cook just until leaves wilt, stirring once or twice. Drain well and keep warm.

    3. Meanwhile, scatter the sesame seeds in a small skillet and bake for five to ten minutes, until they are brown, stirring occasionally. Remove from the oven.

    4. Place spinach in a serving dish and add toasted sesame seeds and remaining ingredients.
