  • 1 head of curly endive
  • 1 scallion, finely chopped, including green part
  • 3 slices of bacon

Method

  1. Remove the core from the endive and cut the leaves into bite-size pieces. Drop them into cold water and rinse well. Drain in a salad basket or on paper towels. Place the endive in a salad bowl, sprinkle with scallion, and set aside.
