Ingredients

  • Juice of 1 lemon
  • ½ teaspoon dry mustard
  • ½ teaspoon

Method

  1. Place the lemon juice, mustard, salt, egg and one-quarter cup of the olive oil in the container of an electric blender. Cover and turn the blender motor on low speed.

  2. Immediately remove the blender cover (or center disk, if there is one) and add the remaining olive oil in a steady stream.
