Avery Island Barbecue Sauce

Ingredients

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • ½ cup chopped celery with leaves
  • ¼ cup chopped green pepper
  • cups(one 1-pound12-ounce can) tomatoes
  • 1 can(6 ounces) tomato paste
  • 1 bay leaf
  • 3 tablespoons molasses
  • 2 teaspoons dry mustard
  • cup vinegar
  • ½ teaspoon ground cloves
  • ½ teaspoon ground allspice
  • 2 slices of lemon
  • teaspoons salt
  • 2 teaspoons Tabasco

Method

Melt the butter in a saucepan. Add the onion and garlic and cook until the onion is tender but not brown. Add the remaining ingredients and simmer for thirty minutes. Let stand until cool. Strain if desired. Use to brush hamburgers, chicken, spareribs, or frankfurters during baking, broiling or grilling.
