  • 1 garlic clove, minced
  • 2 tablespoons finely chopped shallots
  • 2 tablespoons

Method

Using a mortar and pestle, pound garlic and shallots to a paste. Add the parsley and mix well. Blend with the butter and salt and pepper to taste. Use with snails to fill about twelve snail shells.
