Ingredients

  • cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon dried orégano
  • ½ cup freshly grated sharp Cheddar cheese
  • 1 egg
  • 1 cup milk
  • 3 tablespoons melted butter

Method

  1. Preheat oven to moderate (350°F.).

  2. Sift together the flour, baking powder, sugar and salt. Add the orégano and cheese and mix well.

  3. Combine the egg, milk and butter and stir into the dry ingredients, using only ten to twelve strokes to incorporate. Do not overmix. The dough will be lumpy. Fill greased muffin tins two-thirds full. Bake for twenty to thirty minutes.
