  • Unbaked Pie Pastry, 1-crust
  • ½ cup butter
  • cups light brown sugar
  • 2 egg yolks
  • 5 tablespoons cognac
  • 3 egg whites


    1. Preheat oven to moderate (375°F.).

    2. Line a nine-inch pie plate with the pastry.

    3. Cream the butter, adding the brown sugar gradually. Add egg yolks and beat until fluffy. Add the cognac.

    4. Beat egg whites until stiff but not dry. Fold into the sugar mixture. Turn at once into the prepared pie plate.

    5. Bake on the lower shelf of the oven for about forty-five minutes, until crust is lightly browned. Cool. The pie will puff while baking and fall on cooling. Serve with unsweetened whipped cream.
