  • cups sugar
  • 7 tablespoons cornstarch
  • ¼ teaspoon

Method

  1. Mix sugar, cornstarch and salt in a heavy saucepan. Add hot water gradually, stirring. Lower heat and cook, stirring, until clear and thickened. Remove from heat.

  2. Stir several spoonfuls of the hot mixture into the beaten egg yolks. Mix well and pour into saucepan. Bring to a boil, stirring. Lower heat and continue to cook and stir for about two minutes,
