Here’s an incredibly easy home-made rendition of the famous mass-produced Reese’s Peanut Butter Cups®.

  • 1 tablespoon coconut oil
  • 280 g (10 oz) dark chocolate, chopped
  • 150 g ( oz) peanut butter

The Chocolate

In a saucepan, melt the coconut oil and chocolate together over low heat. Mix with a spatula until smooth.

Stack several small paper cases inside each other: it helps keep the paper pleat intact, otherwise the pressure of the chocolate pushes out the sides and distorts the shape.

Using a ratio of two parts chocolate to one part peanut butter, pour a little of the chocolate–oil mixture into the bottom of a paper case and allow the mixture to set in the refrigerator for a few minutes.

Add a little peanut butter into the middle of each cup, then cover with more of the chocolate–oil mixture. Repeat the process with the other cases and place everything in the freezer for at least 10 minutes.

Once the peanut butter cups have frozen solid, you can remove the extra reinforcing layers of paper cases.

Take the cups out of the freezer a minute or so before serving.
