This simple yet tasty dish of crunchy green vegetables in a nutty dressing is packed with flavours and textures. It is my favourite accompaniment to Pan-fried rib-eye steak marinated in miso & aji panca but also goes well with any grilled meat or fish recipes in this book – see, for example, Brazilian churrasco with Nikkei flavours.
