Green asparagus is very good roasted. The tips caramelise beautifully and the stalks stay pleasingly moist. Outside the blood orange season, ordinary oranges will be fine.

Ingredients

  • 400-500 g green asparagus
  • 2-3 tablespoons olive oil
  • ½

Method

Preheat the oven to 180°C/350°F/gas mark 4.

Spread the asparagus in a roasting tin and drizzle with the olive oil. Roast for about 20 minutes
