The Tatin sisters’ fortunate lack of concentration and its resulting ‘upside-down’ masterpiece is a 19th-century tale well known to foodies. I find the story interesting mainly because they owned up and rejoiced in accidental discovery. Among recipes of mine that I can really call original, many have grown from disasters or near disasters. Diving in, making mistakes then making the best of them is the most effective way of learning. After all, it’s only food.
