The Tatin sisters’ fortunate lack of concentration and its resulting ‘upside-down’ masterpiece is a 19th-century tale well known to foodies. I find the story interesting mainly because they owned up and rejoiced in accidental discovery. Among recipes of mine that I can really call original, many have grown from disasters or near disasters. Diving in, making mistakes then making the best of them is the most effective way of learning.
