This home-made recipe for a basic custard-based ice cream simply uses the bubblegum sweetness and colour of the tagada to flavour the custard. Certainly more or less the way it is done at Spoon! You will need to use an ice-cream maker.
In a large bowl, beat together the egg yolks and the sugar. Bring the milk to the boil and pour it onto the eggs and sugar, mixing vigorously.
Pour the custard into a pan and return it to a medium heat, stirring continuously, and cook until it thickens enough to coat the back of a wooden spoon. Do not let it boil or heat too much at the bottom of the saucepan or it will curdle.
