This is a pared-down version of one of Hélène Darroze’s most famous dishes. I remember tasting it in her Parisian restaurant just two days before my daughter was born - perhaps that is why she loves roast chicken so much. It’s the only roast chicken that has ever come close to beating my mother’s.
