The bite of these bitter greens makes them a wonderful foil to pork dishes or to anything made with fava beans. The greens are delicious hot or at room temperature, so the dish can easily be made ahead, but do not refrigerate it and do not add the cheeses or oil until you are ready to serve it. I like to double the recipe, making more than I need, so I can use the leftovers for Cecamariti.
