A tip my mother used to keep prawns (shrimps) ‘fresh’ in the refrigerator or freezer was to add sugar to a bag of prawns (shrimps) beforehand.

This soy sauce concoction can also be used with chicken wings or squid.

Ingredients

  • 600 g or 1 pound 5 ounces large prawns (shrimps)

Method

  1. Rinse the prawns and pat dry. Marinate with the sugar, light soy sauce and oyster sauce for at least 15 minutes.
  2. Add the water to the cornflour, a bit at a time, to form a slurry.
  3. Heat a sauté pan and add the vegetable oil. When the oil is glistening, fry the prawns until fully cooked. Add some slurry to thicken the sauce. Season with salt according t
